A long-time Santa Barbara resident, Alvaro grew up in a kitchen shadowing his father and picking up skills from his classic French techniques. In 1992 Alvaro opened his first venue, Chilango's Mexican Restaurant. Still in his early twenties, this served to further Rojas' autodidactic culinary training. In 2000, Alcazar Tapas Bar opened followed by milk & honey tapas in 2007. His award-winning food and cocktail menus have come to be known as part of the Santa Bárbara culinary landscape for over 25 years.
